Rudi's grandmother guards her almond cake recipe. He reconstructs it over four years through observation. First prize in Zurich. He tells her. She says: you use too little lemon zest. He still doesn't understand how she knows.
My grandmother makes an almond cake from a recipe she has never given anyone. This is not an exaggeration — she hasn't written it down, she makes it from memory, and when anyone asks she provides information that after thirty attempts I've categorised as deliberately incomplete.
I reconstructed the recipe over four years. Not by asking but by watching, tasting, and what patisserie is when you take it seriously: working backwards from a result to its causes. Last year a jury in Zurich awarded my almond cake first prize.
I told my grandmother. She was silent. Then she said: you use too little lemon zest. I know that's true. I still don't understand how she deduced that from a prize.
