Too Simple

A guest calls Beatrice's food too simple. She brings him the same dish, asks him to eat it more slowly. He comes back two weeks later and says nothing. Her conclusion: simplicity is complexity that has found its right size.
The customer who told me my food was too simple did so in a tone I'd encountered perhaps eight times in forty years. Not the tone of someone making an observation. The tone of someone telling you something about themselves while believing they're telling you something about your cooking.
I said: what would you like it to be? He thought about it. He said: more complex. I brought him a second plate — the same dish — and told him to eat it more slowly. He did. At the end he said nothing. He paid and left. He came back two weeks later with his wife. He ordered the same dish. He didn't call it too simple.
I'm not claiming a victory. Perhaps he simply adjusted his expectations. But in my experience when someone says food is too simple what they usually mean is they weren't paying attention. Simplicity is not the absence of complexity. It's complexity that has found its right size.
