Caramel

Sugar at 160 degrees stops pretending — it becomes caramel, smells of itself. Rudi has been looking for that temperature everywhere since. With people it's harder. He's 27 and working on finding it without burning.

Sugar at 100 degrees is still nothing. It melts, it becomes liquid, it doesn't smell of anything particular. At 130 degrees it starts to smell. At 150 degrees it turns amber and smells of what it actually is. At 160 degrees it's caramel and it smells of itself, completely, without apology.

What I mean by this: every material has a temperature at which it stops pretending. I learned this from sugar and have been looking for it everywhere since. With people it's harder. The temperature isn't always visible and some maintain it their whole lives.

I'm 27. I don't yet know at what temperature I become honest. I'm working on finding out without burning in the process.
